Coconut Curry Cauliflower Soup

This is one of my newest and favorite creations.  I will tell you why I love it so much.  Its ingredients are very powerful health foods from the cauliflower, curry, coconut milk, broccoli, and carrots.  There isn't one ingredient that is not amazing.

Also look how pretty it is.

Ingredients: 

1 carrot shredded on cheese grater (large wholes)

1 whole head of cauliflower (3-4 cups of just the flowerets) 

1-2 cups of broccoli flowerets

3 cups of chicken broth or any broth

2 cans of full fat coconut milk

2-3 tablesoons of curry powder

2 tablesoons of almond oil (optional)

salt and pepper to taste

 

How to Create:

use one large saucepan. Place on stovetop at medium heat.  Add coconut milk and wait for it all to melt into a consistent liquid.  Add Chicken broth (anykind).  On seperate frying pan warm/ toast curry powder for 60 seconds or less (make sure pan is warm medium to low heat and dry).  Once curry is done add the curry to the milk and broth.  Nows your time to add the veggies.  I personally cut them up small so they can fit on the spoon.  You can cut any size preference.   Add your almond oil. Let sit until veggies are soft and constantly stirring.  Coconut milk is fragile and can burn.  I cook other things while making this and you can let simmer for up to 20 mins or longer.  The curry just gets better and better with time.
